Curatolo Arini je jedan od najvažnijih i najcjenjenijih tradicionalnih proizvođača originalne, sicilijanske Marsale čija povijest seže sve do 1875.
Marsala je fortificirano vino (ojačano dodavanjem alkohola vinskog porijekla) koje se proizvodi prema starom receptu prenošenom s generacije na generaciju, odležavano u tradicionalnim bačvama od slavonske hrastovine.
Bazno vino proizvodi se iz lokalnih sorti Grillo, Cataratto, Inzolia, Damascino ili Nero d’Avola, Nerello Macalese i Pignatello.
Pri proizvodnji se koristi i drevna tehnika “concia”, dodavanje reduciranog, ukuhanog mošta vinu.
Marsala vina varijaju u stilovima od suhih i svježih do slatkih i odležanih godinama zbog čega dobivaju vrlo privlačnu, jantarnu boju te sekundarne i tercijarne arome zrenja.
Marsala vina se uživaju aperitivno, uz jela ili desertno a također su dragocjeni dodatak/začin pri kuhanju mnogih jela, pogotovo ako se dodaju u npr. razne umake, posebno mesne, rižota, gulaše, variva…a slatke verzije u kolače (i naravno, sa kolačima, posebno suhim slasticama).
Made of a selected blend of Grillo and Cataratto grapes, it has been a well kept secret for years. Bright amber coloured it has intense and complex aromas of dried apricots, dates and sultanas. Plentiful on the palate with traces of toffee and almonds, it has a long and salty finish. Served slightly cool it will pair perfectly with fresh cheese and anchovies bruschetta or fruit and cream tarts or fine pastries.
Destemming, maceration and fermentation at controlled temperature of 20-25C° in stainless steel vats for approx. 7 days with frequent delestages. When all the sugars are svolti, skin maceration continues for another 7 days for optimal tannin extraction, very important for the ageing process. Fortification is done by adding alcohol up to 18% then follows mistella and cooked must. Ageing in Slavonian casks, French and American barriques and tonneaux.
