Growring area: The Grenache grapes used in El Molar come from three different parcels in our property situated on the slopes of Sierra del Molar. The soils in these parcels have a high sandy percentage. The vines have an average age of between 12 and 15 years old.
All the grapes are dry farmed.
Vinification: Minimal intervention. Fermentation is traditional and spontaneous with indigenous yeast and temperature control (30º to 32º C) in underground stone vats. We destemmed 50% of the grapes and 50% were whole bunches. Malolactic fermentation took place entirely in fudres.
Ageing: Aged for 12 months in 5000 and 500 liters fudres
